A day later than anticipated - but here nonetheless - I give you this week's homemade simple soup recipe.
This is one of my own recipes that I used to make myself in big batches at uni for quick, tasty nutritious lunches throughout the week, you've got to try it!
- Tomato, smoked bacon & mascarpone soup -

- 3 tins chopped tomatoes
- 1 pt chicken stock
- 2 rashers smoked bacon
- 1 red onion
- 2 shallots
- 2 cloves garlic
- 75ml white wine
- 100g mascarpone
- 2 tbsp olive oil
- 1 tsp unrefined caster sugar
- generous pinch of salt & pepper

1//. Start by chopping your onion and shallots finely and adding them to a large pot with your olive oil on a medium heat. Once the onions start to cook, chuck in your teaspoon of sugar and add the white wine, this helps to almost caramelise the onions.
2//. Cut your bacon into little chunks and add it to the pan, once cooked through add your chopped tomatoes, chicken stock, smashed garlic cloves and seasoning.
3//. Bring to the boil then turn down to a medium heat, cover your pan and simmer for 30 minutes.
4//. Add the mascarpone and blitz with a hand blender whilst still hot.
5//. Serve with some tasty bread - or my favourite, a bagel topped with cream cheese, or divide into portions to pop into the fridge or freezer as perfect last minute lunches!
