Last week I brought you a little recipe for day time smarter snacking - and today I have the wonderful Rebecca aka The healthy traveller taking over the blog to share with you her recipe for this delicious creamy, super green smoothie!
Rebecca is actually a fantastic illustrator who I met back in December last year at our Creatives Christmas Party! However I only recently discovered that she's also really keen on health and fitness AND she's imminently about to head off travelling for a glorious 11 months!
So I just had to grab her before she left to share with you guys one of her incredible smoothie recipes!
I’m so happy to share a lovely, creamy green smoothie with you today. I know there’s been a lot of hype about them for a while, but they really are such a fab way to get lots of goodness, and they can taste really delicious. I usually have mine as a mid morning or mid afternoon snack, or sometimes a pre-breakfast boost if I’m going on a morning power-walk and need a bit of energy!
I got the idea for this smoothie after falling in love with the Pret Super Smoothie, containing apple, pear, avocado, cucumber and spinach. I didn’t have any pears or cucumber so I got a bit creative but I was just as happy with the result! I’d never added avocado to a smoothie but it made it so lovely and - well - smooth!
Ingredients (makes 1 large glass or 2 small)
- 1/2 ripe avocado (it’s best if it’s ALMOST about to over-ripen, so it’s really soft & creamy)
- approx 1 inch thick ‘round’ of fresh pineapple, or 6-7 chunks if you have a pre-cut one
- 1 small apple (I used Pink Lady)
- 1 generous handful of spinach
- 1 cup ice & 1/2 cup water
Slice the avocado, pineapple and apple and put it in a blender with the ice and water. Once smooth, rinse & add the spinach (smoothie tip: adding the spinach last stops that ‘foam’ that can sometimes form with spinach or kale smoothies). Serve & enjoy!
